Gluten Free Peach or Apple Cake
Gluten free peach (or apple ) cake can be made gluten free with a few simple changes. Swap out the AP flour for KA Measure for Measure GF flour or follow the instructions for how to use some other GF flour. Make sure the vanilla is also gluten free. ALso, follow the baking instructions for your GF flour as well as adding any other ingredients such as Xanthum gum, which is already in KA GF flour.

- Ingredients:
- 6 ripe peaches or apples (or fewer if you wish) peeled and sliced
- 1 cup flour
- 1 and 1/2 tsps baking powder
- dash of salt
- 1 stick of butter melted
- 1 cup of sugar
- 2-3 tbsp of sugar for the peaches
- 1/2 tsp of cinnamon
- 1 cup of milk
- 1 tsp pure vanilla or pure almond flavoring
- Confectioners sugar to dust the top of the cobbler when it is cool
Directions:
Gluten free Peach Cake:
Prehat the oven to 350ยบ and butter a 9" ceramic dish or ceramic fluted tart pan or pie dish.
Peel the peaches or apples, slice them and place in a large bowl. Sprinkle them with the 2 to 3 tbs sugar and 1/2 tsp of cinnamon. Toss them gently with a wooden spoon until all the peaches(apples) are coated with sugar and cinnamon. Place them in a 9" ceramic pan or fluted ceramic tart pan that was buttered all over beforehand. Set aside.
In a large bowl place 1 cup of flour, 1 and 1/2 tsp baking powder and the dash of salt. Whisk together until mixed well. Pour one cup milk into a measuring cup and whisk the milk into the dry mixture until it is well incorporated. Then stir in 1 cup of sugar.Place the butter in a microwave safe bowl and microwave for 45 seconds. Let cool briefly. Stir the melted butter into the batter just until it is well incorporated. Flavor the batter with 1 tsp of vanilla or 1 tsp almond, whichever you prefer and stir it into the batter.Pour the batter over the sliced peaches.
Place the cake into the preheated oven and let it bake for 45 to 50 minutes or until the top is light golden brown and when you press it, it bounces back against your finger. Use a toothpick that comes out clean if you prefer to test doneness with a toothpick.Take out the cake and place the dish on a rack to cool.
You can serve it warm with lactose-free ice cream or whipped cream or even at room temperature. This dessert is so good that you will long for it in the winter, so be sure to freeze a few bags of peaches; then, in the winter, you can just defrost them and make yourself a remembrance of summertime in the middle of a snowstorm.
