Low Fodmap Rice Pudding

A creamy, dreamy but low fodmap, safe for IBS folk rice pudding.

Ingredients
  

  • 4 cups milk (almond coconut, or rice, or lactose free milk
  • 2/3 cup Arborio rice
  • 2/3 cup sugar
  • 1 Tbsp pure vanilla extract
  • 1 strip lemon peel
  • 1/2 cup raisins or cranberries (optional) 1 Tbsp of either one is fodmap safe
  • 1 pinch sea salt

Instructions
 

  • Place the milk, rice, sugar, and vanilla in a 4 quart slow cooker. Stir the ingredients well. Turn on the slow cooker and set it on low for 3 hours.
    After 3 hours, turn off the slow cooker and pour the pudding into a bowl. Add the optional strip of lemon peel and stir the pudding well.
    Let the bowl of pudding cool for 15 minutes. Cover with plastic wrap and place in the fridge. It will keep a few days and is delicious hot or cold.
