Low Fodmap Shrimp Packet

Low Fodmap shrimp packet takes no time to put together using the microwave to parboil the veggies and the oven to finish off the cooking. I used corn, green beans, fresh Carolina shrimp and lovely spices to create a delicious summer dinner.

Ingredients
  

  • Ingredients:
  • 2 cups uncooked shrimp or frozen pre-cooked if that's all you have
  • 2 baby red potatoes scrubbed and halved
  • 1 cup frozen whole green beans
  • 1 ear of corn husk and silk removed and cut in half (optional)
  • Juice and zest of 1 lemon or lime
  • 1 or 2 tbsp extra virgin olive oil
  • 1 large garlic clove, sliced thin pressed
  • Salt and pepper to taste
  • 2 tbsp of water
  • 2 12 " sheets of aluminum foil or 1 sheet of 12" heavy duty foil

  • If using frozen precooked shrimp, place the frozen shrimp in a colander and run cold water over them for five minutes or until all are defrosted. Let shrimp drain in colander while you prepare the vegetables. If using uncooked shrimp, peel and devain them, place them in a bowl and set them aside.
  • Scrub the baby potatoes under cold water, dry them, place them on a cutting board and cut each one in half.
  • Place the potatoes and green beans in a microwave safe bowl. Add 2 tbsp of water. Cover bowl with a plate and microwave on high for 4 minutes.
  • While vegetables are cooking in microwave, juice and zest the lemon or lime into a small bowl.
  • In a small skillet, saute the garlic slices in the olive oil until oil is infused with garlic flavor. Stir so it doesn't burn. Add oil to the bowl of juice and zest, salt and pepper. Stir the mixture and set aside.
  • When the potatoes and green beans are done, drain the water out of the bowl. Lay out the foil sheets. Place the drained green beans and potatoes in the center of the foil. Pile on the shrimp and one half or both halves of the corn. Drizzle the all the food with the lime dressing.
  • Bring two opposite long sides of the foil up to meet in the center; fold edges over twice to make a tight seal. Double fold remaining open sides on the ends to seal packet tightly.
  • Place the packet on a cookie sheet and place in a 350ยบ oven for for 15 - 20 minutes depending on the size of your shrimp. Open up the packet to see if the potatoes and beans are done. If not, seal up the packet and return to oven for 5 to 10 mor minutes.
  • To serve, give each person a packet or open the packets on individual plates and then serve with extra melted butter and slices of lime. Pass a basket of crusty french bread.
